Alla Casciana Soup

Mixed dried pulses.

Ingredients:

500g Casciana Soup (required 12 hours of soaking), 500g Pork ribs, 250g Tomato sauce, 1 Onion, 1 Celery stick, 1 Garlic clove, 1 Chilli pepper, 1 Pinch of parsley, Meat broth (alternatively, in powder), 1 Glass of extra virgin olive oil, Salt to taste.

Instructions and procedure:

After soaking the Casciana soup for 12 hours, make sure to put it in a pan and boil it for at least 90 minutes. Meanwhile, brown the pork ribs. Use another pan to sauté the onion, celery and garlic, then add the tomato, chilli pepper and parsley and let it cook for about 10 minutes. Finally, add the drained soup, the pork ribs and cook everything for about an hour, adding meat broth from time to time. aste and add the salt if necessary.

Serve to taste.
