Ingredients:
600g Broken Fava Beans (requires 12 hours of soaking), 150g Pecorino cheese, 100g Bacon, 1 Celery stalk, 1 Onion, 1 Potato, Dill Extra virgin olive, oil to taste, Salt and Pepper to taste
Instructions and procedure:
To prepare the pureed soup of Broken Fava Beans with crispy bacon and pecorino cheese, we need to soak the peeled beans for at least 6 hours. After that, it is necessary to prepare a vegetable broth with celery, onion, potato and a pinch of salt. In a large saucepan make sure to cook the beans with a drizzle of extra virgin olive oil and start adding the broth a little at a time. Add salt and pepper and let the fava beans simmer for 35-40 minutes. Meanwhile, we pan-fry the bacon: cut it into thick strips and sauté over high heat. As soon as the bacon is crispy, transfer it to a bowl. As soon as the Broken Fava Beans are cooked, mix them with the immersion mixer, keeping some whole to garnish the dish. After add the grated pecorino cheese, mixing thoroughly. Then, put the crispy bacon, a few whole fava beans, a tuft of dill and a drizzle of raw extra virgin olive oil. The Broken Fava Beans Soup with crispy bacon and pecorino cheese is now ready to serve!
