Ingredients (for about 10 flatbeard):
200g Chickpeas Flour, 355g Water, 25g Vegetable Oil, 1 pinch of salt.
Instructions and procedure:
To make the piadinas, sift the chickpea flour using a sieve, add a pinch of salt and room temperature water. Mix with a hand whisk to obtain a smooth batter and then pour in the seed oil, then continue mixing until the batter is smooth and lump-free. Heat a crepe pan or non-stick pan and spread a ladleful of batter. Swirl the pan to create an uniform layer and then continue cooking on both sides with the help of a spatula.
