Ingredients:
500g Pearl Emmer (does not require soaking), 250g Rocket, Cherry tomatoes to taste, Drained tuna in olive oil, Drained black olives to taste, Drained artichokes in oil, Extra virgin olive oil to taste, Vinegar, Salt.
Instructions and procedure:
Boil the Pearled Emmer for 30 minutes. As soon as the pearl emmer is cooked, drain it and leave it to cool. While the emmer is cooling, drain the tuna, black olives and artichokes in a sieve. Then, wash the cherry tomatoes and rocket and cut them into small pieces. We combine everything with the pearl emmer, adding extra virgin olive oil, vinegar and salt to taste.
