Ingredients:
500 g Sausage, Borlotti Lamon Beans (need soaking 12 hours), 70 g Golden onions, 50 g Red wine, 500 g Tomato sauce, Rosemary to taste, Salt, Black pepper, Extra virgin olive oil
Instructions and procedure:
Make sure to initially soak the borlotti lamon beans for 12 hours before starting to prepare your “Lamon Beans and Sausage” dish. After that, drain the beans and then pour them into a large saucepan. Cover them with cold water and bring to boil. As soon as the water is at temperature, low the flame until it boils slowly and cook for about 90 minutes. Salt only at the end of cooking. Clean the onion and chop it with a knife and then pour the onion in a pan with olive oil and cook over low heat for 6-7 minutes. Then add the sausages and leave to brown for 3-4 minutes, stirring occasionally to avoid burning the bottom of the pan. Deglaze with wine when the alcohol has evaporated add the rosemary sprigs and tomato puree. Adjust the salt and pepper and cook for 35 to 40 minutes over a gentle heat. After the indicated time, drain the cooked beans and add them to the sauce, continuing cooking for another 10-15 minutes, then mix the flavors properly. At this point your Lamon Beans and Sausage dish is ready, all you have to do is serve it!
