Spelt
Spelt undergoes three different processes: pearling, dehusking, and cracking. The spelt process is the most complex, beginning with product selection to remove impurities, followed by dehusking to shell it, and finally, pearling if necessary. For further quality enhancement, spelt is passed through a color sorter, called the Optical machine, which removes the smallest impurities that other machines may have missed.
Lentils
The processing of lentils is much simpler. Like spelt, lentils are first selected to remove impurities. Unlike spelt, lentils are sorted by weight using a specific machine that discards lighter or damaged seeds. In the final stage, lentils are also passed through the Optical machine to achieve a perfectly clean product.
