Minestrone del Nonno

Mixed dried pulses.

Ingredients:

500g di zuppa del nonno (necessita di ammollo 12 ore), 200g di pomodori pelati, 1 cipolla, 2 carote, 1 sedano, 1 mazzetto di bieta, 2 patate, 2 zucchine, olio extravergine di oliva q.b., sale q.b.

Instructions and procedure:

First of all cut all the ingredients into small pieces, put the celery, carrot, onion, potatoes, chard and courgettes into a pot, then add the granddad soup (previously soaked for 12 hours), peeled tomatoes, salt and oil. Add water and simmer until the ingredients are fully cooked (approx. 90 minutes). Serve to taste with a sprinkling of Parmesan cheese.
