Pearl barley is a cereal with excellent nutritional properties. After the refining process, it has no outer coating, facilitating cooking time in the kitchen, as it does not require previous soaking, and the grains are white in colour. Barley can be eaten instead of rice, making what is called ''orzotto'', or it can be used to prepare cold salads, together with chopped grilled vegetables.
